Parmesan Cheeseburger Loaf and Arnold Palmer

Tonight for dinner it was quiet… you could have heard a pin drop.  The family was focused on their meal.  The perfect family meal: Parmesan Cheeseburger Loaf and yellow watermelon, fresh from the garden, and a side salad. 


Do you like iced tea and lemonade?  How about together?  You may have heard of an Arnold Palmer drink - it is simply iced tea and lemonade!  A simple refreshing drink anytime of the day.  Tonight I made a batch and poured it in my Lock & Lock EcoLife water bottle.  This durable water bottle is BPAfree. 

Parmesan Cheeseburger Loaf
Serves 6

1 pound extra lean ground beef
1/2 cup chopped sweet onion
1 small green pepper, chopped
2 garlic cloves, minced
2 1/2 tablespoons all-purpose flour
3 tablespoons Dijon mustard
2 tablespoons ketchup
1 tube (11 ounces) refrigerated crusty French loaf
4 slices reduced-fat process American cheese product
1 egg white, lightly beaten
4 tablespoons shredded Parmesan cheese

Preheat oven to 350 degrees.  In a large skillet, cook the beef, onion and pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the flour, mustard and ketchup; set aside.

On a baking sheet lined with parchment paper, unroll dough starting at the seam. Pat into a 14-in. x 12-in. rectangle. Spoon meat mixture lengthwise down the center of the dough; top with cheese slices. Bring long sides of dough to the center over filling; pinch seams to seal.

Brush top with egg white. Sprinkle with Parmesan cheese.

Bake for 25-30 minutes or until golden brown. Serve warm. 




Arnold Palmer
Serves 2

1 cup prepared iced tea
1 cup prepared lemonade
Ice cubes

In a serving glass, pour 1/2 cup iced tea and 1/2 cup lemonade over ice.  Stir.  Repeat with remaining iced tea and lemonade.
