Asparagus Lemon Pasta can be served hot or cold - great for eating now or as leftovers. Vegetarians will enjoy this dish as the main dish, while meat lovers can serve this along side a cut of grilled chicken or steak.
Asparagus Lemon Pasta
Serves 6
2 cups uncooked whole wheat penne pasta
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
6 tablespoons olive oil
1/4 cup red wine vinegar
2 tablespoons minced fresh parsley
4-1/2 teaspoons lemon juice
1 1/2 teaspoons Italian seasoning
1/2 teaspoon dill weed
1/2 teaspoon grated lemon peel
1/4 cup grated Parmesan cheese
Cook pasta according to package directions, adding asparagus during the last 6 minutes; drain (do not rinse). Transfer to a large serving bowl.
In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over pasta mixture and toss to coat. Spoon into individual serving bowls. Sprinkle with grated Parmesan. Can be served hot or cold.
