Slow Cooker Split Pea Soup and Honey Whole Wheat Bread

As the weather starts to change, our bodies naturally adjust.  One adjustment to the colder weather is we begin to crave more comfort (warming) foods. Unfortunately, many comfort foods are high in fat, cholesterol, and calories.  Expect the Slow Cooker Split Pea Soup. Aromatics are sautéed and then added to dried split peas, water, and vegetable broth. The diced ham provides a boost of protein and salt. While this simmers in the slow cooker, you can prepare the Honey Whole Wheat Bread.  Top this warming bread with jam or preserves. 

Slow Cooker Split Pea Soup is a perfect meal for lunch the following day.  As a Lock N Lock supporter, I received the Plus 100 Vacuum Bottle.  Pour in the hot soup and it will stay hot until lunch time!  It even comes with a cup built into the lid. 



Slow Cooker Split Pea Soup
Serves 6

1 large onion, chopped
1 cup chopped celery
1 cup chopped fresh carrots
1 teaspoon dried thyme
2 tablespoons olive oil
1 package (16 ounces) dried green split peas, rinsed
4 cups vegetable broth
2 cups water
6 ounces diced ham
1/4 teaspoon pepper

In a large skillet, sauté the onion, celery, carrots and thyme in oil until tender.

Transfer to a 5-qt. slow cooker. Add the peas, broth and water. Cover and cook on low for 7-8 hours or until peas are tender.

With an immersion blender, puree about half of the soup.  Add the diced ham and pepper; heat through. 


Honey Whole Wheat Bread
Makes 1 (bread machine) loaf

1 1/8 cups warm water
3 tablespoons honey
1/3 teaspoon salt
1 1/2 cups whole wheat flour
1 1/2 cups bread flour
2 tablespoons canola oil
1 1/2 teaspoons active dry yeast 

Add ingredients according to the manufacturer's directions to your bread machine. Use the wheat bread cycle and light color setting.
