Thai Turkey and Peanut Wraps

Consider this a portable version of thai lettuce wraps.  The Thai Turkey and Peanut Wraps can be served at the kitchen table, in the car on the way to an evening activity, or while seated on the sidelines.  If eating it on the run, wrap in aluminum foil and peel away the wrapping as needed. 



Asian Turkey and Peanut Wraps
Serves 6

1 large onion, chopped
1 tablespoon peanut oil
1 pound lean ground turkey
1/2 cup Wildtree Thai Sesame Sun Butter sauce
2 tablespoons soy sauce, divided
1 tablespoon hoisin sauce
1 medium cucumber peeled and chopped
6 (10 inch) whole wheat flour tortillas
2 cups chopped romaine lettuce

Saute onion in peanut oil in large skillet over medium-high heat 3 to 5 minutes or until onion starts to soften. Add turkey and saute 7 to 8 minutes or until cooked through.

Stir in thai sauce, soy suace, and hoisin sauce. Add cucumber; heat until hot.

Assemble each wrap by spooning about 3/4 cup turkey mixture on each tortilla and topping with lettuce. Fold in sides of tortilla and roll up. Secure with toothpick.
