I didn't feel like cooking tonight. So I didn't... well, not a difficult meal anyway. Fish is the perfect fast meal component as it only takes a few short minutes to cook. I always have a large supply of frozen tilapia in our freezer. One thing we never have in the house is alfredo sauce. My husband doesn't care for its ultra creamy texture. But recently I purchased a jar to use in a recipe. So, I had about 1 cup remaining in the jar. Tilapia Alfredo was born! The sauce takes less than two minutes to prepare and the tilapia bakes for 10 minutes. I paired this with leftover brown rice and leftover steamed broccoli. For our salad, I defrosted Cucumber salad and served it in seperate bowls on the side. The entire meal took 15 minutes to prepare. I wish could have these "no cook" meals every night!

Tilapia Alfredo
Serves 4
4 tilapia fillets
2 tablespoons olive oil
1 tablespoon Old Bay seasoning, or to taste
1 tablespoon olive oil
2 cloves garlic, minced
1 cup Alfredo sauce
2 Roma tomatoes, chopped

Preheat oven to 425 degrees. Brush the tilapia fillets with oil on both sides, season with Old Bay seasoning to taste, then place into a 9x13-inch baking dish.
Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
Meanwhile, heat the olive oil in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. Stir in the Alfredo sauce and bring to a simmer. Reduce the heat to low, and keep warm until the fish is ready. Stir in the chopped tomatoes. Pour the sauce over the fish to serve. Sprinkle with additional Old Bay seasoning if desired.
