Weekend lunches are special at our house since I miss having lunch with the girls during the week. It is fun to make creative lunches - for kids and adults!
Gingerbread Man Sledding Lunch
Makes 1 lunch serving
2 slices whole wheat bread
1 tablespoon natural peanut butter
1 tablespoon grape jelly
1/2 cup vanilla yogurt
3 baby carrots
1 slice (unpeeled) apple
5 red hot candies
black cake decorating gel (or 4 mini chocolate chips)
Prepare peanut butter and jelly sandwich using two slices of wheat bread. Using large and small gingerbread man cookie cutters, cut 2 figures.
On a serving place, spread yogurt along the bottom of the plate to make the "snow". Place the two gingerbread man sandwiches above the "snow". Using the decorator's gel, make two ears on each figure. Place three red hot "buttons" on the large figure and two red hot "buttons" on the small figure.
With two carrots, place on the plate, one above the other. Lay the third carrots behind the two carrots. Top with a slice of apple.
