Chicken with Grape Tomatoes and Grits
Serves 4
4 boneless skinless chicken breasts
Coarse salt and ground pepper
1 pint grape tomatoes
1 yellow onion, thinly sliced
4 teaspoons minced garlic
1/2 cup instant grits
4 tablespoons grated Parmesan
4 tablespoons roughly chopped fresh parsley
Heat a medium skillet coated with cooking spray over medium-high. Season chicken with salt and pepper. Add chicken to skillet, and cook for 1 minute on each side. Cover, reduce heat to medium and cook until internal temperature reaches 165 degrees. Transfer to a plate and tent with foil. In the same skillet, coated with cooking spray over medium and add tomatoes, onion, and garlic. Cook until tomatoes are softened and onion is tender, about 5 minutes. Stir in parsley.
Meanwhile, in a small pot, bring 2 cups of water to boil. Stir in grits. Cover, reduce heat to low, and cook until water is absorbed, about 7 minutes. Stir in Parmesan; season with salt and pepper. To serve, top grits with chicken and vegetables.
