Philly Cheese Steak Stromboli and Peanut Packed Trail Mix

Q:  What makes a Stromboli?  A: Any fillings of your choice, rolled up inside a dough a pastry and baked.  Philly Cheese Steak Stromboli takes the classic Philly Cheese Steak and turns it into a family/time friendly stromboli! 

You can easily double or triple this recipe and put the remaining uncooked stromboli in the freezer.  When you are ready to serve, refrigerate the Stromboli for at least 8 hours and then bake as directed.

For the dough, you can use frozen whole wheat pizza dough (then thaw as directed on the packaging), refrigerated pizza dough, or your own favorite whole wheat pizza dough recipe.  For this recipe, I used Wild Tree Whole Wheat pizza dough. 

Now that the holiday break has come to an end, it is that time again for after-school snacks.  The kids can prepare this quick-assembly snack.  To help control portion sizes, scoop 1/2 cup servings into individual bags or containers.  I stored it in the Lock N Lock boroseal glass rectangle baking dish with carrying lid.


Philly Cheese Steak Stromboli
Serves 8

1 pound whole wheat pizza dough
1 large green peppers, julienned
8 ounces sliced fresh mushrooms
1 red onion, halved and sliced
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon pepper
6 slices American cheese singles
1/2 pound sliced deli roast beef
1 egg
1/4 cup shredded part-skim mozzarella cheese

Preheat oven to 350 degrees.  In a large nonstick skillet, sauté the peppers, mushrooms and onion in oil until tender. Stir in garlic powder and pepper; set aside.   

On a baking sheet lined with parchment paper, roll dough into a 15x10-inch rectangle. Layer half of the sliced cheese, all of roast beef and vegetable mixture lengthwise over half of dough to within 1/2 inch of edges. Top with remaining sliced cheese. Fold dough over filling, jellyroll style; pinch seams to seal and tuck ends under.

Lightly whisk egg in a small bowl; brush over dough. Cut slits in top. Bake for 20-25 minutes or until golden brown. Sprinkle with mozzarella cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before cutting. 


Peanut Packed Trail Mix
Makes 6 cups

1 cup peanut butter chips
1 cup dried cranberries
3 cups peanut butter cereal
1 cup roasted and salted peanuts

In a large mixing bowl, combine all ingredients.  Stir well.  Store in an airtight container.
