Greek Meatloaf with Feta Cheese
Serves 4
2 teaspoons olive oil
1 small red onion,
diced
2 garlic cloves,
minced
2 large celery stalks,
diced
Salt and pepper to
taste
1 pound ground chicken
1 pound ground turkey
1 large egg
2 slices whole wheat sandwich
bread cut into small pieces
1 cup crumbled feta
1/4 cup fresh dill,
chopped
Preheat oven to 350
degrees. In a medium skillet, heat oil over medium heat. Add onion, garlic, and
celery and cook, stirring occasionally until vegetables are soft. About 7
minutes. Season with salt and pepper.
In a large bowl,
combine vegetables, turkey, chicken, egg, and bread. Mix
well with your hands until well-combined. Mix in feta and dill. Add additional
salt and pepper if desired.
Line a rimmed baking
sheet with parchment paper. Transfer the
meat mixture to the prepared baking sheet.
Using your hands, form into a 4” x 10” loaf. Bake until cooked through, 45-55 minutes. Let
rest 10 minutes before slicing.
