Greek Meatloaf with Feta Cheese

We love feta.  Anything with feta on it tastes better.  Now take the classic meatloaf and stuff it with feta.  Yum. 




Greek Meatloaf with Feta Cheese
Serves 4

2 teaspoons olive oil
1 small red onion, diced
2 garlic cloves, minced
2 large celery stalks, diced
Salt and pepper to taste
1 pound ground chicken
1 pound ground turkey
1 large egg
2 slices whole wheat sandwich bread cut into small pieces
1 cup crumbled feta
1/4 cup fresh dill, chopped

Preheat oven to 350 degrees. In a medium skillet, heat oil over medium heat. Add onion, garlic, and celery and cook, stirring occasionally until vegetables are soft. About 7 minutes. Season with salt and pepper.

In a large bowl, combine vegetables, turkey, chicken, egg, and bread.   Mix well with your hands until well-combined. Mix in feta and dill. Add additional salt and pepper if desired. 

Line a rimmed baking sheet with parchment paper.  Transfer the meat mixture to the prepared baking sheet.  Using your hands, form into a 4” x 10” loaf.  Bake until cooked through, 45-55 minutes. Let rest 10 minutes before slicing.
