Grilled Basil Chicken Pizza uses pre-baked crust and
rotisserie chicken to make this a fast meal.
Cooked on the grill, the pizza reminds of a local “pizza farm” that uses
outdoor brick oven to cook their pizza.
Although, with two hungry and tired kids, a fast meal still isn't fast enough. That is when I resort to "appetizers". "Appetizers" in our house are little portions of food, typically part of the meal, that are served in condiment size cups. Tonight, the one-year-old was famished. She started with "Cup of Tomatoes" and then "Scoop O' Cottage Cheese". That bought me just enough time to finish the table setting and salad prep while my husband brought the pizza in from the grill.

Basil Chicken Pizza

1 rotisserie chicken
1 (2 crust) package pre-baked pizza crust
1 (2 crust) package pre-baked pizza crust
2 tablespoons olive oil
1/2 cup jarred pizza sauce
2 cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
3 tablespoons shredded fresh basil leaves
Heat
gas grill to medium-high. Brush pizza crusts
with some of the olive oil. Transfer doughs, oil-side down, onto a grill. Brush
dough tops with olive oil. Cover and grill 3 minutes. Using tongs and a spatula,
flip over doughs. Working quickly, spread 1/4 cup pizza sauce on each pie. Top
with mozzarella. Cover and grill 2 minutes. Uncover and divide grilled chicken
between pies. Grill 1 minute. Remove pizzas to cutting board and top with
grated cheese and fresh basil and serve.
