Make-your-own-pizza was on the menu tonight. The family was so excited... until they asked for the meat portion of the pizzas. Sausage... pepperoni... nada. Then I remembered, I bought an extra package of pre-cooked breakfast sausage for a different meal. The pre-cooked sausages are easy to cut when frozen and are the perfect size for pizza topping!
Quick and easy meals can be nutritious. Chickpea and Tomato Salad provides a healthy dose of fiber with the chickpeas. And the fresh basil and tomatoes adds a taste of summer you will savor.
Chickpea and Tomato Salad
Serve 4
1 can
chickpeas, drained and rinsed
16
ounces grape tomatoes, halved
20
large basil leaves, chopped
3
cloves of garlic, minced
1 tablespoon
white wine vinegar
1 tablespoon
apple cider vinegar
2
teaspoons olive oil
Pinch
of salt
Fresh
ground black pepper to taste
In a
large bowl, toss all ingredients together.
Cover with plastic wrap and chill for at least 20 minutes before
serving.
Easy Sausage Pizza with Naan
Serves 6
1 package (6 count) whole wheat Naan
8 ounces pizza sauce
1 package (10 links) pre-cooked breakfast sausage, sliced
8 ounces sliced mushrooms
1/2 cup fresh chopped basil
2 Roma tomatoes, chopped
12 slices fresh mozzarella
Preheat oven to 425 degrees (see how to make your own pizza oven). On one slice of Naan, spread a portion of the pizza sauce. Top with sausage, mushrooms, fresh basil, and tomatoes. Lay two slices of mozzarella over the top.
Bake for 10-15 minutes until the cheese is melted and crust is golden brown.
