PB&J Banana Pancakes

Our kids love peanut butter and jelly sandwiches.  So much, that our oldest daughter now asks for peanut butter and jelly toast "sandwiches" for a weekend breakfast.  


Here is my theory.  If X loves peanut butter and Jelly and X loves pancakes.  And if X loves bananas.  Wouldn't X love PB&J Banana Pancakes?  I got an A++++ on that theory.









PB&J Banana Pancakes
Serves 4-6


2 cups biscuit mix
1 cup buttermilk
2 bananas
2 large eggs
1/2 teaspoon ground cinnamon
3 tablespoons butter or margarine
3/4 cup maple syrup
1/4 cup reduced-fat peanut butter spread
1/2 cup strawberry jam


Heat griddle to medium-high heat.  In a large mixing bowl, mash the bananas.  Add the biscuit mix, buttermilk, eggs, cinnamon and melted butter.  Stir to combine.  Drop batter onto the hot griddle and cook until the batter bubbles on top.  Flip and cook until done.  


Meanwhile, in a small bowl, combine the syrup and peanut butter.  Mix well.  


To serve, top pancakes with peanut butter syrup and jam.
