Pizza Pasta Salad

When trying to decide what to cook for dinner, chosing pizza as the main course is a sure winner.  So how about Pizza Pasta Salad?  A definite winner in our house.

Pizza Pasta Salad
Serves 6

8 ounces uncooked whole wheat spiral pasta
1/2 teaspoon cornstarch
1/3 cup water
1/4 cup Parmesan cheese
1/2 cup red wine vinegar
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon ground pepper
1 1/2 cups halved cherry tomatoes
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup sliced green onions
1/2 cup sliced pepperoni

Cook pasta according to package directions.  Meanwhile, in a small saucepan, combine the cornstarch and water until smooth. Bring to a boil.  Cook ad stir for 1-2 minutes or until thickened.  Remove from heat.  Stir in the Parmesan cheese, vinegar, oil, oregano, salt, garlic powder and pepper.  Drain pasta; rinse in colde water.

In a large bowl, combine the remaining ingredients.  Add the pasta and dressing.  Toss to coat.  Serve immediately or cover and refrigerate for at least 1 hour before serving.
