Any Day Stir-fry

During a recent freezer clean-out, I found 4 pork chops: 2 boneless thin cut and 2 boneless country style. Because they were not the same thickness, I didn’t want to cook them together because they will not cook evenly.  Solution?  Stir-fry!  Cut the two varieties to equal size piece.  For Any Day Stir-Fry, you could use any meat or protein, the key to this stir-fry is the sauce combination.


Any Day Stir-fry
Serves 4

4 center cut pork chops, thinly sliced
1/4 cup chicken broth
1/4 cup rice vinegar
1/2 cup soy sauce
1/2 cup mushrooms, sliced
1 green bell pepper, sliced
5 green onion, sliced  
1 clove garlic, minced
1 tablespoon minced fresh ginger root
1 tablespoon sesame oil

Cut pork into bite-size pieces.  In a medium bowl, mix pork with chicken broth, rice vinegar, and soy sauce. Cover, and let marinate in refrigerator while you prepare the remaining ingredients.

Heat wok or large skillet over medium heat, then coat with sesame oil. Sauté garlic and ginger until fragrant. Increase heat to high. Add pork, reserving marinade.  Cook and stir until pork is no longer pink, about 4 minutes. Stir in mushrooms, green pepper, and sliced green onion. Cook, stirring, until vegetables are tender, about 4 minutes. Stir in reserved marinade, and cook about 2 minutes.

Serve over rice.
