My husband loves Caesar salads. This version of Caesar salad adds taco seasoning to store-boughten Caesar dressing to add an extra punch. And with the addition of cooked (use grilled, baked, roasted,etc) chicken breasts, the Southwestern Chicken Caesar Saladis a complete meal.
Instead of chicken breasts, I used roasted turkey breast. Leftover from a previous meal, I didn't want it to go to waste and the substitution worked out great!!
For dessert, I cheated. No, I didn't buy bakery cookies or even refrigerated cookie dough for that matter. But I did use cake mix for the base of my Oatmeal Chocolate Chip Cake Mix cookies. Much to my surprise, they turned out soft and chewy - and very delicious.
To store the leftover cookies, I placed them in one of the containers from the Lock N Lock Fajita Set (made to store tortillas). The size is perfect to fit at least 1 dozen homemade cookies and the airtight seal keeps them fresh!

Southwestern Chicken Caesar Salad
Serves 4
1/2 cup purchased Caesar salad dressing
2 teaspoons taco seasoning mix (from 1-oz. pkg.)
1 (10-oz.) pkg. chopped romaine lettuce
1/2 cup croutons
1 oz. (1/4 cup) shredded fresh Parmesan cheese
9 ounces cooked chicken breasts, cutinto strips
In small bowl, combine Caesar salad dressing and taco seasoning mix; mix well. In large bowl, combine lettuce, croutons and cheese; toss to mix. Add dressing; mix well. Divide lettuce mixture evenly onto salad plates. Arrange chicken evenly over lettuce mixture. If desired, top each salad with additional shredded Parmesan cheese.
Oatmeal Chocolate Chip Cake Mix Cookies
Makes 3 dozen
1/2 cup butter, softened
2 eggs
1 (18.5 ounce) package yellow cake mix
2/3 cups oatmeal
1 cup chocolate chips
Preheat oven to 375 degrees. Line baking sheets with parchment paper. In a large bowl, mix butter and eggs untillight and fluffy. Stir in cake mix and oatmeal until well combined. Fold in chocolate chips. Place dough on parchment lined baking sheets by the rounded teaspoon.
Bake for 8-10 minutes or until golden brown. Allow to cool on the baking sheet for 5 minutes then transfer to a cooling rack.
