Do you ever wonder to yourself what you were thinking when you did "X"? My most recent occurrence was this weekend's grocery shopping trip. Two items on the menu for this week were gyros and pizza burgers - both freezer meals. Well, tonight when I got home I grabbed the defrosting gyro package out of the refrigerator and re-read the preparation label. Cucumber sauce... didn't buy any pre-made sauce nor did I buy cucumbers to make it. "That's ok" I thought to myself. I will just make the pizza burgers tonight instead of tomorrow. Hamburger buns... I forgot to buy those. "That's ok" I thought once again. I will just make the beef and mushroom stew. The meat is defrosted and I know I have all the ingredients. Wait... it takes 8 hours in the slow cooker and I only have 20 minutes until dinner needs to be on the table.
Back to the Freezer Meal Gyros. Instead of cucumber sauce, I used blue cheese dressing. As for the pizza burgers tomorrow night. I will be stopping at the store tomorrow after work.
Freezer Meal Gyros
Serves 6
1 pound sirloin steak
3 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon canola oil
4 garlic cloves
6 pita bread
Cucumber sauce (for serving) purchased or homemade (Tzatzki sauce)
Place steak in freezer bag; combine red wine vinegar, Worcestershire sauce, oil and crushed garlic cloves; add to meat. Freeze.
Bundle with: 6 pita breads.
Cooking Instructions: Thaw steak in marinade. Thaw pita breads and heat. Barbecue or grill under oven broiler until medium rare. Slice steak against the grain in thin strips. Tear thin strip from edge of pita breads; open and stuff with steak and shredded lettuce; garnish with prepared tzatzki sauce.
