Freezer Stroganoff

Four hours at work, one call from daycare – baby sick, thirty-five minute drive to daycare, one hour waiting for the doctor, twenty minutes to get from point A to point D – usually takes 45 minutes, and thirty minutes past our normal meal time because of an unexpected guest.  These are the days when supper may have been forfeited, except I already had dinner ready to go in the slow cooker.  I pulled this meal from the freezer the night before, let it thaw in the refrigerator overnight, then place it in the slow cooker this morning. No dirty dishes! 

 

Looking for a simple and fast dessert?  You can't go wrong with the Krispie Brownies.  You may already have the ingredients in your pantry.

When you reach your destination, simply stack the baskets, one on top of the other for a make-shift storage unit.  Now you don’t have bags of groceries or toys or multiple weekend travel suitcases laying around to trip over.


 

 

Freezer Stroganoff

Serves 6

4 tablespoons roast seasoning
1 cup water
2 tablespoons flour
8 ounces sliced mushrooms
1 ½ pounds cubed stew meat

8 ounces sour cream
1 (12 ounce) package egg noodles, cooked

Place all ingredients in a gallon plastic freezer bag (except sour cream and noodles), SMOOSH, and label.  Freeze. 

Cooking Instructions:  Thaw overnight in refrigerator.  Place meat mixture in a slow cooker.  Cover; cook on high for 4 -5 hours or on low for 8 hours. During the last 1/2 to 1 hour of cooking time, stir in the sour cream.  Serve over cooked egg noodles.




Krispie Brownies
Serves 30

1 package fudge brownie mix (13-inch x 9-inch pan size)
1 package (10-1/2 ounces) miniature marshmallows
2 cups (12 ounces) semisweet chocolate chips
1 cup peanut butter
1 tablespoon butter
1-1/2 cups crisp rice cereal

Preheat oven to 350 degrees.  Prepare brownie batter according to package directions for fudge-like brownies. Pour into greased 13-in. x 9-in. baking pan.

Bake for 28-30 minutes. Top with marshmallows; bake 3 minutes longer (marshmallows will not be completely melted). Cool on a wire rack.

In a microwave-safe bowl, melt the chocolate chips, peanut butter and butter; stir until smooth. Stir in cereal; spread over brownies. Refrigerate for 1-2 hours or until firm before cutting.
