Spiced Salmon and Candy Heart Pizza

A simple salmon recipe perfectly paired with a vegetable and bread. Bring the leftover salmon to work the next day.  But instead of smelling up the break room, serve over salad greens with a balsamic vinaigrette.   


Even though Valentine's Day has passed, your Valentine may still appreciate a special treat. This Candy Heart Pizza is better than any boxed chocolate (and cheaper too).  




Spiced Salmon
Serves 4

1/2 teaspoon ground ginger
1/2 teaspoon garam masala
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
Dash of kosher salt
Dash of ground red pepper
4 (6-ounces each) skinless salmon fillets
Cooking spray

Preheat the broiler.  In a small bowl, combine the ginger and the next 5 ingredients (through pepper). Rub spice mixture evenly over salmon. Place fillets on a broiler pan or baking sheet coated with cooking spray. Cover with foil; broil 7 minutes. Remove foil; broil an additional 4 minutes or until desired degree of doneness.



Candy Heart Pizza
Makes 1 3/4 pounds candy

1 1/2 cups milk chocolate chips
1 cup butterscotch chips
3/4 cup miniature marshmallows
3/4 cup chopped salted peanuts
3/4 cup crushed potato chips
2 tablespoons flaked coconut
1/4 cup M&M's
2 tablespoons vanilla chips
1/2 teaspoon shortening

Using a pencil, draw a 10-inch heart on a waxed paper. Trace line with a black marker.  Place paper, marker side down, on a baking sheet; set aside.




In a large microwave-safe bowl, melt chocolate and butterscotch chips; stir until smooth. Stir in the marshmallows, peanuts and potato chips. Immediately spread on prepared pan into heart shape. Sprinkle with coconut; top with M&M's.

In a microwave, melt vanilla chips and shortening; stir until smooth. Drizzle over top. Refrigerate for 1 hour.   Remove waxed paper. Let stand for 10 minutes at room temperature before cutting.
