Crunchy Honey Garlic Chicken Breasts

After you try these chicken breasts, you will never want anything else.  The crunch, the flavor, the pure decadence.

Don't be fooled by the list of ingredients - this recipe is super quick and super easy.  But your friends will think you cooked all day.  If you are crunched for time, make the flour spice combination ahead of time and set aside.

Crunchy Honey Garlic Chicken Breasts
Serves 4

4 large boneless chicken breasts
2 cup flour
4 tsp salt
4 tsp black pepper
3 tbsp ground ginger
2 tbsp ground nutmeg
2 tsp ground thyme
2 tsp ground sage
2 tbsp paprika
1 tsp cayenne pepper
4 eggs
8 tbsp water
Canola oil

Honey Garlic Sauce:
2 tbsp olive oil
3 – 4 cloves minced garlic
1 cup honey
1/4 cup soy sauce
1 tsp ground black pepper

lice the breasts by placing them flat on a cutting board and using a very sharp knife to slice them horizontally, without going through the other side.  Lay them out flat.

In a shallow dish, combine the flour through cayenne pepper.  Whisk with a fork to combine.

In a separate shallow dish, make an egg wash by whisking the eggs with water.

Dip the chicken into the egg wash and then into the flour and spice mix, pressing the mix into the meat to get good contact.

Heat a nonstick skillet on the stove over medium (or medium low) heat with enough canola oil to cover the bottom of the pan.  Be careful not to heat the oil too hot or the chicken will cook too quickly.  Fry gently for 4-5 minutes per side until golden brown and crispy.

Remove the chicken from the skillet and let sit on a wire rack.

Meanwhile, in a medium saucepan, add the olive oil and minced garlic.  Cook over medium heat until garlic is tender, but not browned.  Add the honey, soy sauce and pepper.  Simmer for 5-10 minutes, remove from heat and allow to cool slightly.

Place chicken on a serving platter.  Drizzle all of the sauce over the chicken. Serve.
