Cobb Salad with Avocado Cilantro Dressing


Have you ever planned something in your head and then when you try to implement it, the plan goes awry?  That is what happened tonight.  Unfortunately, this misdirected plan resulted in our family walking in the door at 7:30 pm having yet to eat dinner.  Luckily, I had all the ingredients for the Cobb Salad with Cilantro Avocado dressing prepped.  Dinner was on the table in less than 5 minutes.



Salad
6 1/2 cups torn romaine
1/2 rotisserie chicken breast, chopped
2 medium tomatoes, seeded and chopped
1 medium ripe avocado, peeled and chopped
1 cup canned kidney beans, drained and rinsed
1/2 cup finely shredded cheddar cheese
1/2 cup bacon bits

Dressing
3/4 cup low-fat buttermilk
1/4 cup of fresh cilantro
1 medium avocado
1 clove garlic
2 tablespoon chopped scallion
juice of 1 lime
1/8 teaspoon cumin
1/4 teaspoon fresh ground pepper
1/2 teaspoon kosher salt

Combine all the ingredients in a blender and blend until smooth. For a thinner dressing add more buttermilk.
