Horseradish Burgers with Pretzel Rolls

Last year I won a local 10k race. My prize?  A $50 gift certificate to the local creamery.  It was like winning a million dollars - $50 in cheese (coming from a true Wisconsinite).  So I loaded up on cheese and brought it home.  We ate what we could and put the rest of the prize cheese in the freezer.

I made Horseradish Burgers with Pretzel Rolls with the horseradish cheese.  This cheese was perfect for these burgers as the horseradish gave the burgers a boost of zing and flavor while the cheese provided a smooth creamy filling.

Horseradish Burgers with Pretzel Rolls

Serves 4

1 pound ground beef
1 large egg
1/2 cup fine, dry breadcrumbs
4 ounces crumbled horseradish cheese
1/2 teaspoon salt
1 (8 ounce) can bamboo shoots, drained and chopped
1/2 cup zucchini chutney
4 pretzel rolls, split

Combine first 6 ingredients; shape into 4 patties.

Cook patties in a large nonstick skillet over medium-high heat 2 minutes on each side or until browned; remove from skillet.

Top a pretzel roll half with one beef patty.  Spread 1/8 cup chutney over patty and top with remaining roll half.  Repeat with remaining rolls.
